A short drive away from San Sebastian a landscape of rolling hills, bucolic farms and sheep unfold before your eyes. Suddenly the pace of the city stops and the heartbeat of the Basques marks its pace. The smell of cheese lingers in the air while we drive through these little towns filled with farms. Our day begins in one of the most spectacular natural parks of the Basque Country.
A light and easy trek in this amazing setting, following a famous trail that was built by the roman and later used by the royals to cross the borders in the past centuries. We will reach the tunnel of Saint Adrian where there are still the remains of the ancient toll to pay for the goods you brought. Today it is considered part of the Saint James way.
We will make our way to a real sheep farm, located in the rolling Basque hills, to taste and learn about one of the culinary icons of the area, Idiazabal cheese.
ENEKO, sixth generation cheese maker, opens his farm and heart to us. His eyes and smile tells us he is quite happy following the family tradition. You will step back in time while you visit this 17th century old farm and taste its award winning cheese.
How do we end a perfect day? Eating. We have hand picked the best local spots, where the local products will be the finishing touch. Just because we are deep in the valley doesn’t mean they don’t know what fine dining is. You are in for a treat!
